Claire, I thought potato pancakes were called latkes? Well, whatever name
you use, they are delicious - but I use olive oil instead of lard to fry
them. We had to eat fish on Fridays, but at least it wasn't lutefisk! To
make this topic legal, be sure you snip some nice fresh herbs (home grown of
course) into your potato pancakes . :)

potatoes and some onion, mix with as many eggs as needed to bind the
potatoes and fry in deep fat, turning once. Polish serve with sour cream
and apple sauce. Germans with other fruit sauces. I cannot spell the
Polish word correctly or would offer it as well.
As children, my husband and I were stuffed full of these on Fridays which
were meatless in our houses. The fat used was rendered pork fat or lard. I
don't know why they did not kill us before age 40.
My domestic experiences over the years did not include cooking. I am a very
poor cook and an expert in getting a meal on the table without approaching
the stove. I can, however, make some of those traditional holiday things as
I felt some responsibility to the kids. On a trip to NYC a long while ago,
I pinched a sandwich menu from one of the best deli's in the City and that
has been my favorite cookbook over the years.
You guys are all better in the K. than I.
