Hi there,
Not a dumb question at all. I don't remember anyone answering this,
so I'll go ahead and tackle it.
Pinching refers to the removal of a bud by "pinching" it between
your thumb and forefinger, then gently pulling off.
You definitely *don't* want to do this with flower buds unless
you're really sure of what you're doing -- instead, you should
be concentrating on the vegetative buds. These are the buds that
determine how a plant grows, but you want to do it before
the flowerbuds form (I'm kind of oversimplifying here).
