mulching perennials and thermometers

Well, with all the freezes we had these past few weeks, I need some better
ways to protect my plants. What do you cold-winter folks recommend? How
do you mulch your perennials for the winter? I think of mulching as
putting mulch around the perimeter of the base of a plant to conserve
water. But if you are mulching for protection from frost, do you cover the
plant? Hmmm...

Also, where can I get a min/max thermometer, the kind that records the
minimum and maximum temperatures -- I remember them from my lab/fieldwork
days, but I don't know where to buy one....

Thanks!
