Just to clear up the question of the flammability of acetic acid,
many organic compounds will burn (oxidize) if heated sufficiently.
Common flammable liquids such as ether, benzene or ethyl alcohol will
ignite at temperatures of room temperature or below (this is called
the Flash Point for non-chemists). Acetic acid has a Flash Point of
105F to 135F.
A fire in a warehouse containing acetic acid, particularly in higher
concentrations would be a real danger, but there's not much danger of
your nightly vinaigrette going up if it gets too close to a flame.
With this in mind, I might think twice about boiling down a pot of
the stuff in an effort to increase the acid concentration,
particularly if it was done over an open flame
