There are a couple of things that can be done when blocking SPAM from an
email list:

Almost all list software these days restricts posting to only those
subscribed to the list.

>From there:
1)  Most newer list software allows the option of forcing an email
confirmation for every
subscription to the list -- this will keep spammers from auto-joining,
spamming, then quickly
unsubscribing from the list.

2)  Some list software will block or require list-owner authorization
for emails which confirm
to particular common SPAM structures -- "MAKE MONEY", etc.

Beyond this there are a few other things (filtering, strict domain
policies, etc) that one can do to block spammer access to one's email
server before they even get far enough to post to a list there.
