For what its worth, one must absorb 1 calorie of heat to lower the
temperature of 1 gram of water by 1 degree. But it takes the absorption of
80 calories of heat to freeze that gram to ice, and it gives back off 80
calories again when it melts. When the gram of water is coating a bud, the
bud gets the benefit of the 80 calories before either the water or the bud
can freeze.
