You will find when you go back to the tubers after the winter, that some of
them will have dried up, and the ones which have survived will have eyes; 

 Do you just rip them >apart?  Is the eye bud easy to see? 

Yes the eye is easy to see, although they can be small, but they are
whitish, and look alive,  and the rest of the tuber is dead-looking and
brownish-gray; I wouldn't say "rip" them apart, just pull gently;

 Also, I have been starting them from
