I don't know if it is THE ultimate book on grasses, but the only one I have
has served me well -- Taylor's Guide to Ornamental Grasses. It has lots of
nice pictures, but the best part is the extensive A to Z listing of cultural
information. There are also lists of grasses for specific uses, such as
'grasses to avoid in a border', 'grasses for shade', etc., and general
information about using grasses in the landscape.
As far as I know, there is no Michael Dirr or Alan Armitage of ornamental
grasses. Until such a guru emerges and writes a comprehensive manual (or
until someone on the list writes and tells me one already has), the Taylor's
Guide works for me! --Janis
