By all means, go ahead and mulch. I like to mulch immediately after
planting; especially since our summers are so hot and dry. Even if you
plan to plant more (and everyone does, sooner or later) you can plant
through the mulch. It makes a huge difference in weeding, helps keep
the soil cool and moist, and in the winter will help protect your
perennials from frost heave (a real problem in this area of the country
where winter temperatures can vary 50 or 60 degrees over 24 hours!)
