Glenn,
If there were no air or gas in a pumpkin then the
cavity would be a vacuum, like outer space. The air
pressure would be equal to atmospheric pressure which
is 14.7 psi. That would equate to a crushing force of
hundreds of thousands of pounds exerted on the
pumpkin. If you cut the pumpkin open, the whooshing
sound would suck your eyeballs out!
The pumpkin must be filled with air or gas or it would
implode. I believe air which is a gas, does permeate
the shell; fungus spores, bacteria and molds can not.
