I'm gonna try to answer some of your questions, and make some comments
here.

plants."  It is unusual that a female flower will show up 3 feet from
the base of the vine.  Did you mean to say 3 feet from the base of the
vine?  Or three feet out on a side vine?  Either way you should probably
cut the fruit off.  If it is 3 feet from the base, you could have a
pumpkin grow quickly enough and large enough to pull the vine out of the
ground.  Probably unlikely, but at least possible.  If its on a side
vine, you should cut it off, because (as I have recently learned myself)
your fruit will not realize its full potential unless it is grown on the
main vine.  On the other hand, its kind of late in the season to cull
poorly positioned pumpkins if they are the only pumpkins on your vines.
If you have others started on the main that are growing well, you might
want to cut the side-vine fruit off.  It all depends on how much growing
you think you can get out of your plant before its time to harvest.

You probably won't be able to use the seeds for anything as they
probably aren't mature yet.  I have a 15 day old, 40+ pound pumpkin that
I just culled a few days ago, that I am going to try to make some pie
out of, though.  I am wondering if the younger fruit is any more tender
than a mature fruit.  Mature AG pumpkins seem to need lots of seasoning
and special cooking care to make decent pie with.

"What kind of ingredient could be added to make the giant pumpkin pulp
smoother such as the smaller pumpkin varieties?  Has anybody made
pumpkin wine from the pulp?"  I do have a link that will give you a
bunch of recipes from people who grow Atlantic Giants.  They have lots
of tasty ideas, including pumpkin wine (the wine recipe is near the
bottom of the page)!
