Yep! Compost them. I figure, all the stuff that the pumpkins took out of your 
soil, just put them back into the soil. Use a shovel to chop up vines, leaves, 
and the fruit.

Even if there is a smell, a little exposure to the air will quickly dry out 
what's left of your fruit and the bad smell will quickly be replaced by a good 
one. The only challenge in a rotted fruit is to recover the seeds............ 
but still, let them dry out a little, then recover as many seeds as you can.

I always let the pumpkin rot in place or cut the pumpkin up and place it in 
different areas of the patch. Pumpkins contain a lot of nitrogen and are good 
for the soil. After the pumpkin season is over and I am through displaying them 
(sometimes as late as Thanksgiving), I cut them up, toss the pieces into the 
truck, and spread them around the patch.  It does not take long for them to melt 
back into the soil.
