Hi Everyone,
I just wanted to share a tasty looking recipe that I received today on a
recipe mailing list that I also belong to. I haven't tried making this myself
yet, but it does look like it would taste pretty good!

PUMPKIN CHEESECAKE
Crust: 3/4 c. Graham Crumbs
1/2 c. Pecans
1/4 c. Brown Sugar
1/4 c. White Sugar
1/4 c. Butter (melted)
Combine above ingredients and press into a 9" springform
pan.
Filling: Whisk in a large bowl with mixer -
1 1/2 c. Pumpkin (Pumpkin Pie Filling works as well)
3 Eggs (room temperature)
1/2 c. Brown Sugar
1 1/2 t. Cinnamon
1/2 t. Nutmeg
1/2 t. Ginger
1/2 t. Salt
Beat together -
3 pkg. Cream Cheese (8 oz)
1/2 c. Sugar
2 T. Whipping Cream
1 T. Corn Starch
1 t. Vanilla
Then- add to pumpkin mixture, pour into pan and bake at
350°F for 50-55 minutes or until centre has just set.
Topping: 2 c. Sour Cream
3 T. Sugar
Pecans to garnish
Spread over hot cheesecake. Put back in oven for
10 minutes. Run knife around rim to loosen. Cool
thoroughly at room temperature. Chill overnight, remove
pan.
