Observation is the method we use to determine when to fertilize also.
Here is what we used and when.
FS = Neptune's Harvest Fish/Seaweed
SZ = Schultz Tomato Plus, 18-19-30
TMG = Miracle grow for tomatoes 18-18-21

Rate of growth of the fruit is also important ot observe although one
really does not know how fast is too fast. It should be noted also that
while this is what worked for us, everyone's soil is different and
may need fertilizer more or less often.
