Utah's climate--latitude and humidity


So latitude isn't a big factor?  I was wondering about hours of daylight, 
but since I haven't seen any real huge AGs out of Alaska (they grow a 
pretty mean cabbage I hear), I guess we don't really need more than 14-15 
hours of sunlight.  
I did look up Simcoe, Ontario in the Atlas the other day and noticed that 
it's nestled between about as much water as any place in the world.  I'm 
wondering about the humidity there (very high I'll bet) and thinking that 
somehow high humidity is advantageous to AGs.  Would misters or over-head 
sprinkling increase my humidity and give me more vigorous plants?
While we're on the topic of  good and bad places to grow AGs, what do you 
guys think--are there some places in the world that you would THINK 
should be great for growing really big pumpkins but that haven't been 
tried yet?  How about Tahiti, where it's between 80 and 90 degrees about 
360 days out of the year?  How about Germany or Ireland?  What are the 
pro's and con's of these places?
