If you do that the stem is bound to snap. You should do that in the afternoon when it's warmer out and the stem is more pliable. Also, you shouldn' move it all in one day, that will also make it snap. I gradually move my fruit over a couple of weeks until they are perpendicular to the main vine. Slow and steady wins the race.
