And will the bigger leaves wilt easier in the high temps than the otherwise
smaller leaves that were never shaded?

So here is my question...if you shade the new growth long enough to form big
leaves, then allow full sun, would you gather more energy for growth? Hmmmm?

Exactly matches my theory, leaves that get full sun all day don't "need" to
be as big as leaves that are shaded, at least as far as the plant is
concerned.
