They can wilt, or just get temporarily stunned, which can slow growth
processes temorarily. I forgot the exact equation of how much water per
square foot for one inch of water, but it would be somewhere around that. If
you think your main roots only go out 5 feet, then you would half that. Also
it is important that the vines take root, since it would be hard for a main
root system alone to provide the amount of nutrients and water as a GIANT
pumpkin requires!
