Question about choosing plants.

I have a few questions for the list. Right now I have about 13 plants
started inside. 3 are in the 3 leaf stage (started earlier) and ten are in
the 2 leaf stage with the 3rd leaf forming. Because of space I am planning
on keeping 1 or 2. Though I will probably put all outside for a while then
thin to 2 then to 1. Since I have never done this before, I don't know what
a good plant should look like. Some have a thinker stem then others, and
some are taller and some are shorter even though the leaves are about the
same size. Some have more fur on the stem too. I have 3 that have got fairly
tall (about 3-4 inches with 3 leaves) which everyone I have talked to on the
list seems to agree is rather leggy and I should bury to the leaves when I
plant. I have 2 that are fairly stocky that seem to have pretty fast leaf
growth. Am I correct to assume the stocky ones are the best candidates? Or
is it too early to tell. Another question is regarding cold frames. Its not
too cold here any more. Temperatures all this week should be in the 70s
maybe 80 during the day down to 50 to 55 at night. Should I put these plants
in anything when I put them out. I was thinking of building a hoop house,
but it seems like it will be pretty hot during the day. Is 50 at night
something to be concerned with. Should I harden them off? Or if I plant them
in a cold fame or mini greenhouse is that OK for night. Any advice will be
appreciated.

Thanks,
