pruning vines

I too would like to know a few details on pruning.
I'm not clear........should I "pinch off" the tertiaries
9-12 inches off the secondary ?....or should it be a
clean slice ?.....Dipped in Captan ? Powder , paste
or diluted solution ? I've heard reference to each
of these forms.
Kennedy 625 and Cole 686 about to tear down my fence.
