Seed maturity is achieved within a couple weeks
after fertilization. When the egg and sperm unite, the genes combine
and form an embry. Genes do not "grow" upon embryo
formation. They are ready to go. The endosperm will take some time to
develop, but it is not integral for seed viability to my knowledge.
A seed's genetic potential is static. Aside
from cross selection, one cannot influence the genetic potential of a
seed. (Unless you selectively induce mutations.) All you can do is
maximize the environmental potential, which allows the seed to maximize it's
genetic potential.
