greenhouses and water

I have a couple of questions.  What temps should you aim for in your greenhouses 
prior to and after planting the seedlings?  When do you remove the houses?

Secondly, does anyone have a preference on type of water to use with starting 
mix?  Well, distilled, spring, general drinking?
