I have gone through some of the same problems you have with both pumpkins
and sweetcorn. In pumpkins we have the most problems with gophers. The
gophers around our place prefer butternut squash seed, however. They will
dig up half an acre of it, but stop on the exact row that the acorn squash
begins.
In sweetcorn, I have seen both squirrles and geese pluck the seeds out of
the groud just like you described. It is amazing to me how they can know
just where to dig. Unfortunately, I don't have a solution yet, let me
know if you come up with one.
PS I think our squirrles must get a stomach ache, because we use
fungicide treated seed.
