You are correct about how much a gallon of water weighs. It is about 8.35
pounds. However, there are 7.48 gallons in one cubic foot of water, so the
total weigh would be 62.4 pounds per cubic foot. 
Pumkinguy is correct, one inch of water per acre is 27,154 gallons or .62
gallon per square foot.
