You would get a more symmetrical pumpkin, true. However, I think you would
increase vine and stem stress considerably as well as risk breaking the stem
during repositioning. Depending on how big the pumpkin was at repositioning
time, you might also hurt your back.
I'm purely guessing here, but I think it might also change the dynamics of
weight estimation, as well. Any of the experienced growers able to
confirm/deny that?
Those are just my post-rookie season thoughts.
