Nebraska hot and humid? Try growing pumpkins in Florida.
Seriously, Dave, I don't think any variety will do any better for you than
those you tried this year. I am assuming you are growing regular, pepo
variety field pumpkins. Heat will cause bolting. You will need to tell us the
varieties you planted and when, also the temps during the growing cycle,
highs and lows, when and how often you watered as well as the method
(ie.overhead sprinklers or ground watering). Maybe your method of cultivation
needs fine tuning to adapt to your conditions.
I could suggest a Calabasa, warm weather, heat tolerant variety that has dark
flesh but buff colored skin, probably not what you are looking for if you
want decorative jack o'lanterns.
