Copied from my NAHC Wild Game Cookbook 1997.
Oven Roasted GroundHog, (Serves 4-6)
Ingredients:
1 Groundhog-(whole)
Morton Tender Quick
3/4 Cup Vinegar
1/4 Cup Soy Sauce
1 Cup Water
2 Large Onions, (Chopped)
2 Garlic Cloves, (Minced)
1 lb Fresh Mushrooms, (Sliced)
Your Favorite Seasoning.
Combine Morton Tender Quick, vinegar, soy sauce, water, onions and garlic
cloves to form marinade. Marinate groundhog for 4 hours in refrigerator,
turning after 2 hours. Place meat and marinade mixture in a cast-iron skillet
or dutch oven. Generously sprinkle your favorite seasonings over meat and
cover tightly. Bake for 2-4 hours at 300 degrees until meat separates easily
with a fork. Add mushrooms 30 minutes before removing from oven. Serve with
potatoes.
Couldn't find anything on Vine-Borers I guess I'm going to have to write
