I posted a query for a pumpkin seed recipe to the recipe list I am on and here
is the answer that was received.  Hope this helps.

In a large bowl mix salt and water.  At least 1 cup of salt, more if you like.
You can use Kosher salt, too.  Add your cleaned pumpkins seeds to the bowl,
making sure that there is enough water to just cover the seeds.  Stir this
around once in a while and let it set overnight.  Drain the next morning (or
start all this in the morning and drain by late evening) and let air dry a
little.  Spread seeds in a single layer on baking or cookie sheets.  Roast in
a low oven 250 most until of desired doneness.  I like mine super crunchy and
browned and it takes about 20-30 minutes.  Hubby likes them white and a little
chewier.
