Seed maturity question

We just cut open the 360# my husband grew this year, and about 2/3 of the
seeds were immature. This P didnt set until the 3rd week in August, and
grew right up to picking day October 16th. Could it be that this P had a
lot more growing to do yet, and thats why the seeds are immature, or what
could have caused this?
We had another one, 258#, with a much thicker rhind, that had mostly mature
seed in it, and it set after the biggest P, but stopped growing around the
first of October. It never developed ribs or anything, and we didnt do
anything special to it, unlike the 360# which we babied.
Just looking for an opinion.
Also, do you think the seeds that looked mature will grow? What is your
experience with this, anyone?
