Inside Seed Growth

My daughter and I were carving a pumpkin for a pumpkin carving contest. 
Much to our surprise, SEVERAL of the seeds INSIDE the pumpkin had
already begun to sprout - some even producing the first green sprout
leaves!  What do you think. . .had we just put holes in the pumpkin, do
you think they would have continued to grow?  EVERYBODY at the contest
was amazed to see it.  On the outside, the pumpkin felt solid and did
not appear to be spoiling in any way!
