wine vinegar


 bottled wines flavor will go off if ex posed to high temps and will turn
to vinegar.                                            if you are not to
this point yet in the process  it could be air bound bacteria if they get
in the fermentation vat they give different flavor than the reaction by the
yeast  do you use an air lock.   I have not worked with raspberries but
they are tart some times wild grapes are tarter and require more sweetener.
from the get go.
