germinating seeds

So far this year I have opened up 2 AG to remove the seeds only to find
out they had germinated. Got 0 seeds from one and about 30 from the other.
both had stoped growing a month or so before opening them. i have removed
seeds from pumpkins for many years and never find this problem. What causes
this?
