You can count on a couple hundred seeds from a big one, maybe more.
No worries on having enough seeds from it that's for sure.

It's no big deal really. Get the seeds out of the pumpkin and clean them off. Get all the slimy stuff off by washing them. I just set them on paper towels at room temperature. It takes awhile, maybe a week for them to dry completely. Others use food dehydrators on low settings for a day or so. Don't overheat
and cook them if you want to try that.  You know they are ready when the
very thin "onion skin" like layer flakes off. Then put them in ziploc bags to maintain moisture content. You can put them in the freezer or stuff them in a drawer somewhere. I sprouted 3 year old seeds this year that I thought
were the "bad" ones that were just in a kitchen drawer the whole time.
These are the thin flat ones that I thought were no good. Wrong! I now have about a 200lb pumpkin on one of those plants. So much for "no good" seeds. I was suprised to find out that nearly all I used sprouted out of about 19. I still have bags of those seeds in the drawer and in the
freezer.   So they can last probably many years and still be good.
I would not be surprised if they can last 10 or 20 years and still sprout.

I have the "good" fat seeds in my freezer. Looks like that isn't even necessary
based on my experience this year.
