cutting off vine

I was wondering how much weight a pumpkin will start losing once cut from the vine. Also, do you cut it off once it stops growing based on measurements? I'm afraid I will have to cut 2 of 3 this week, probably sooner than later. Will they rot if left on the vine too long with no growth?
