Hi All,
I got this recipe off of the recipe mailing list I belong to, and thought you
might enjoy it also. I think I will try to make my own pumpkin of course this
year though. Does anyone know if the Jack O Lantern type is all right to make
pies and stuff out of?

Pumpkin Cake Roll
Beat 3 eggs on high speed of mixer for 5 minutes, gradually beat in 1
cup granulated sugar. Stir in 2/3 cup pumpkin and 1t. Lemon Juice.
Stir together 3/4C. flour, 1t. baking powder, 2t. cinnamon, 1t.
ginger, 1/2t. nutmeg and 1/2t. salt. Fold into pumpkin mixture.
Spread in greased and floured 15x10x1 inch pan. Top with 1C. finely
chopped walnuts. Bake @375 for 15 minutes. Turn out onto to towel
coated with icing sugar and begin rolling the cake and towel from the
narrow end. Cool.
Filling:
Combine 1C. icing sugar and an 8 ounce package of regular or light
cream cheese, 4T. butter or margerine and 1/2t.vanilla. Beat mixture
until smooth. Unroll the cake and spread the filling. Reroll and
chill until serving.
A truly delicious, yet light dessert.
