Yup, sounds like flower stalks alright - perfectly normal for a
sexually mature plant. It doesn't hurt the edibility of the rest of
the stalks, but most folks just cut of pull them off so that the
energy of the plant goes into the leaves instead of flowers.
BTW, I understand the flower stalks of some of the decorative species
are quite attractive - red flowering. Anyone else growing the
decorative kind?
