I'm not sure about the cold hardiness when grown in a tub of water but, I
can attest that my three clumps of Acorus gramineus (both 'Variegatus' and
'Oborozuki') have happily made it though four zone 5 winters. The clumps
are grown in moist garden soil in a part shade location. They do look a
little ratty after the winter and I always have to make the decision 'to
cut back or not to cut back'. I have found that my plants do not recover as
quickly from a trim as say ... a Carex.
