Pitaya is the fruit of a vining succulent (!) Hylocereus undatus. The
fruit is egg-shaped and about 3 or 4 inches long -- it would fit in the
palm of your hand. It has a leathery skin and rather mealy flesh, speckled
with small black seeds much like kiwi seeds. But the seeds are randomly
scattered throughout the flesh rather than organized into any arrangement.
The fruit I've seen is either white or an incredible magenta -- nearly
flourescent looking. It is sweet and mild and delicous. One interesting
characteristic, the vine itself needs to be grown on a sturdy support -- as
it often dies at the bottom, so it is no longer rooted in the ground. I've
only seen pictures, but it sounds to me like it must then collect moisture
and nutrients from its supporting structure and the moisture in the air!
