Well, Barb, that rather depends on what kind of seed you're talking about.
I have had dogwood (Cornus florida) germinate in the fridge upon leaving it
in there for a bit too long. Some seed that needs/likes cool/cold
temperatures for germination can easily do it, but if the plant only wants
stratification for a short period and then warm temperatures or oscillating
temperatures to germinate, it would be unlikely, at least in the first week
or so. Likelihood increases for cool temp. germinators the longer you have
them in the fridge.
What you want to do is check them every week or so...unless they are cool
temp. germinators and then you need to do this more often; daily in some
cases.
Would be easier to check them if they were on top of a moist towel instead
of inside of a fold, but again, depends on what seed you've got ;-) If
they are large seeds, go ahead and move them...just bring out the paper
towel, remove the seeds, fold the towel and put them back, reseal the
baggie and set it on a sturdy flat surface that won't get mangled in the
fridge and then you can check them visually easier.
