Have you looked under your trays for slugs? They can do a great job
of grazing.
If not slugs or snails it must be some other grazing pest. Have a
good look around for other noxious animals.
Was the new soil sterile? It could have contained pests or their eggs
etc if not. Slugs are my best guess though
