Claire, down home in the hills of KY we cook spring greens called "salet."
Dandelions is added to salet just the same as all the other wild greens. It
is best to do the picking in the edge of the woods or away from all possible
contaminants. My grandmother has to have salet to start the spring, she is
ninety years old. Sorry to say there are not too many people left who know
sour dock, speckled betty, shawnee, etc. They are a very tasty cooked with
bacon fat.
