Years ago in Liege, Belgium, I remember having a delightful salad made
with dandelion leaves, bacon, and I forget what else. My problem is that I
never NOTICE dandelions until they are in bloom, which is too late for
anything except making dandelion wine. Every year about this time, I say
Wait till next year!
A last word on Hem fulva buds--I like to use them when there is just a
tinge of color to the bud. Also, pick more than you think you'll need,
as they cook down to almost nothing.
