Did you eat it raw?  There is a variety of quince which is good for eating
raw,
but it's really only _good_ if you like bitter/astringent flavors, and most
quinces
are this close to inedible raw.  They turn glorious when cooked.  They also
change color, from whitish yellow to orange -- when you make jam, jelly or
paste the color is intense, when you make pie it's mild.

Or then again, maybe it could be that you don't like it anyway, if you ate
it cooked.
