Kevin, where are you and where is your customer? Growing veggies and fruit
in shade is a tough order. The customer would be better off locating a
nearby organic grower to buy from and sticking to hostas under those oak
trees.
Off the top of my head, and only knowing that it's zones 8 to 7, you might
try kiwi, any of the berries, esp. blueberries and gooseberries, possibly
apples and/or quinces, and such herbs as lovage, parsley, chives etc.
Basil should do okay. Maybe leafy vegetables like swiss chard? Possibly
lettuce? Zucchini would work fairly well. I don't know about the bulbous
veggies, like garlic or onions. I can guarantee they should not
even THINK about tomatoes! I'm sure others can supply much more info.
