Shady edibles?

Okay garden gurus, I had a question the other day that stopped me in
midsentance (hard to do) and before I go to my reference manuals and attempt
to dig up the answer the hard way, I thought I'd try to and see if anyone had
been there and done that already. The customer is a cook who prefers fresh
grown organic fruits, herbs and vegitables. They would like to grow some of
thier own. So far an easy answer... but... Their entire property (borderline
zones 8 to 7) is covered with hardwood trees, mostly oaks. As they have no
wish to cut down trees nor thinning out limbs, what fruits, herbs or
vegitables can they grow in this area.?
