I've just gone outside to look at my variegated pieris.  You are
quite right that it is not as strong a grower as the green ones.
Mine is at least 30 years old and is a bit taller than me, and very
dense.  I have never pruned it.

The green ones are way over my head so that I need a ladder to
deadhead them, and I have sawed out big branches every few years so
that other things in the bed can grow.  After the last pruning, some
species tulips that I hadn't seen above ground for at least 12 years
came up and bloomed.

I prefer the various green ones as they are always doing something
interesting.  The variegated one seems to be the same all the time,
which is rather boring.  Rather like a conifer.
