May I recommend a book: "Japanese Maples" by J. D. Vertrees, ISBN
0-88192-0487-7. It's about a $40 book, but it contains probably all your
answers except for retail sources.
Most mail order nursery's have small trees. Keep in mind that depending on
the type of Japanese maple will determine it's growth rate. I have about 9
dwarf weeping Japanese maples that I've been fortunate to find locally. My
oldest is ~9 years old in the ground, and it's about 3.5'H x 5'W!
