Remove the entire stem - it will only die back anyway. If yours have been
blackened by frost, then go ahead and cut them back and dig them up. If
not, wait until that happens. Oddly enough, I've had better luck bringing
those rhizomes through the winter un-desiccated or un-moldy by leaving the
earth around them and piling them in a container left in the garage where I
*have* to pass it so I can remember to check to see if it needs a sprinkle
of water. Cleaned and packed neatly in bags of vermiculite or perlite,
they pass out of mind until spring with fairly dire consequences...
