I think the correct term is to pleach, not pleat. There is a great
pleached alleé behind the governor's palace in Williamsburg. If I recall
correctly the trees used there were beeches. I have also seen hazel used
in this way, and years ago did something similar with hemlocks. I think
nearly any kind of tree can be used so long as they are young enough to
have flexible branches.
