I believe iris seeds will germinate in any loose medium.  I have even germinated them before in 100% vermiculite.  As long as the germinating inhibitor is leached out with constant watering or stratifying (or combo of both), the seed should germinate.
 
Now, I am not sure if peat pellets have enough medium in them for the roots.  I think they are a bit small. 
 
Mine are germinating now in a mix of one third peat.
